Pickled peppers

Well, chillies.


I came back from holiday to a pretty good crop of chillies. They are seriously hot (I thought they were jalapenos, then I checked and they're actually cayenne).


I've been putting them into curries and chili but it was unlikely I was going to get through them all before they went off, so I decided to try pickling them to preserve them for a while.

Adapted from this recipe - reduced the quantity and I have no peppercorns and the ones in Waitrose are really expensive. I do, however, have a jar of coriander seeds which were sent to the office with a press release for a new restaurant.

Really easy to do, just a case of putting all the ingredients in a pan and watching it bubble for a while.

I'm now in the leaving it in the fridge to marinate stage so it's going to be interesting to see what it tastes like.
